I am wanting to tile a part of my garden (Spanish style) but after a visit to the DIY shop I noticed that there are several sizes of tile spacers, why is this, and which ones should I get?

I think you have to figure out how much grout you wish to have between tiles.
Once you have that figured out, you can get the spacers that will give you that distance between tiles.

I wonder if it would also be a consideration if the tiles will be freezing in the winter.
Would you think that there should be more space with more grout in colder climates?

I would agree that it depends on how much grout you want between the tiles. We just tiled a hearth and I did not realize that there were diffrent sized spacers(it was our first project). So, we guessed and it looks good. You could also ask at the hardware store where you're buying your products. They might be able to give you an idea.

I don't think you need more grout for an outside project. I don't see more grout on other tile areas outside.
Yes I'm willing to bet it's all in the look you want. Just pick out the size that you think would look good (spaced apart) that is.

Tiles used for outside are obviously exposed to the elements and should be slip resistant (if used on floors), vitrified or an impervious tile (in other words frost resistant).
I would not grout with a joint of less than 5mm for a outside floor.

It all depends how much grout you want showing the thicker the spacer the more grout used.
