I have this huge mirror in my bathroom and want to add wood trim to dress it up a bit.

I would like to use trim that is carved with a design but, since this will be in the bathroom, I need to create a smoother surface over the trim to avoid dust collecting in it.

Is there a polyurethane that will fill in and level the depressions but still allow the carved patterns to show through?

I am not sure but there may be framing services that might be able to achieve the same result through a variety of other methods

Hey, what about plaster trims? There is plaster moulding..there should be plastic trims around right?

That is one project that I wouldn't want to take on myself. With my luck I would end up with 7 yrs bad luck.

This is not an easy thing for a home user to do. You have to hire a carpenter for this since it involves complex steps with a lot of additional materials.
